Cooking with Neigbours: Ibelemari Kio

Who doesn’t love hanging around the kitchen with a new friend? This is one of the things many of us have missed most during these past few months of staying home, and it’s time to indulge. In this one-hour webinar we will introduce you to our neighbour, Ibelemari Kio, and learn about the food from her culture of origin, Nigeria. Together, we will cook a delicious Nigerian meal as we chat about her home country, it’s culture and traditions, and about her experiences settling in Canada.

You are welcome to just watch – but you can also join us and cook with us. Ibelemari will be standing by to answer your questions on chat as you do so. The grocery list is below, so pick up the ingredients, open up your laptop or tablet, and meet us in the kitchen!

Ingredients for Nigerian Jollof Rice:

  • 4 cups of parboiled rice
  • 1 can of crushed tomatoes
  • 1 can of tomato paste
  • 2 bulbs of onion
  • 2 bell peppers
  • Vegetable oil
  • 2-3 scotch bonnets (optional)
  • Broth or water
  • Curry powder
  • Thyme
  • Salt
  • Ginger and garlic (optional)
  • Knorr seasoning cubes (you can find this at any African store or your local grocery store)
